This is one of our weekly cake specials that we offer here at New Market BBQ!
We participate annually in an event put on by the Hospitality Association that we are a member of called the Taste of Huntsville. Every year they have a “theme” and this year it was Margaritaville. I went on the hunt to find a great recipe for a Pina Colada Cake and couldn't really find ONE that I liked, so I combined about 3 different recipes to make up the one we now serve here at our restaurant, and our customers just LOVE this cake! Hope you enjoy it as much as our customers do!!

BEST Pina Colada Cake EVER!
This cake is EXTRA moist and full of wonderful flavor from the pineapple, to the coconut milk, and then the awesome coconut frosting! We hope you enjoy it!
Recipe Ingredients:
Cake
- 1 box yellow cake mix
- 1 box vanilla pudding
- 4 eggs
- 1/2 can Coco Lopez 15 oz
- 1/3 Cup Oil
- 1 can drained crushed pineapple, reserve liquid, 22 oz
- 1 can sweetened condensed milk
- 1/2 can Coco Lopez 15 oz
- 1 Cup reserved Pineapple Juice
Frosting
- 1 Cup Sugar
- 1 Large Tubs Whipped Topping
- 1 cup sour cream
- 1 Large bag shredded coconut—save some for garnishing the top
How to Prepare:
- Combine sugar, sour cream, whipped topping, and coconut.
- Blend well and chill while you prepare the cake.
- Preheat Oven to 325
- Prepare cake by Dry beating cake mix & pudding until lump free
- Add eggs, oil and 1/2 can of Coconut Milk
- Mix until well blended, approximately 2 minutes being sure to stir from the bottom.
- Mix in 1 can of drained crushed pineapple.
- Bake in a 9x13 inch pan for approx. 25-30 minutes depending on your oven. We use convection.
- Let cake rest in pan for about 10 min.
- Mix Sweet Condensed Milk, 1/2 Can of Coconut Milk, and 1 cup Pineapple Juice together
- Poke holes in cake with end of butter knife or other utensil that isn't too small or too large
- Pour mixture over cake ensuring to get into the holes to soak into the cake.
- Cool cake completely.
- Add Frosting and cover well.
- I like to garnish with toasted Coconut.
Notes
We use a gas convection oven here in our restaurant, so our temp and cook times are based on that, which for most home cooks, you may need to bump up the cook temp and adjust the time a little.
