Peach Cake with Coconut Pecan Frosting & the Hospitality Gene

It's that time of the week again where I start digging thru my recipes and determining which Cake we're going to make for you guys!!  We haven't made this one in a while, so I picked the Peach Cake with the Coconut Pecan Frosting! It's SO GOOD!!  I know I know… I say that about all of the cakes we make here at New Market BBQ, but REALLY, it's AWESOME!

It's the highlight of my week to find something interesting to make for you guys and this recipe was actually a suggestion from my younger brother Joe.  He and I inherited the “cooking” and “hospitality” genes in our family! LOL!  We both have an eye for great recipes and love to experiment and create different dishes for our family, Joe does way more experimenting than me actually!!  It's fun chatting up about Joe's latest adventures in food.  He used to live in TN, then CA, and now PA.  His job at AutoZone has taken him all over this country and his girls have really experienced a lot of different food in the process.  Looking forward to our next visit together and experimenting on another recipe.  I'd LOVE to make his Seafood Gumbo for you guys, but wow does it have a LOT of ingredients and takes a TON of time to make. It's not really a BBQ joint menu item either, but it sure is good!!

Anyhow, Joe ran across this Peach Cake Recipe last year and shared it to me on Facebook so I just had to try it.  It's always fun to just GO WITH IT when you see a recipe that looks like it needs to be altered, but I did the first time I made it and then had to make it my own the next time around.  I'll share the recipe with you that we use here at our restaurant below so you can try it for yourself. If you just want a piece or two or three, you know you can always come on out to eat with us here at New Market BBQ and we'll fix you right up!

When Spring is in the air, I like to bring in the fruit type desserts, so I hope you give this one a try. You won't regret it.  The original recipe did not call for eggs or any liquid at all, but I added them myself, as I prefer a more moist cake. Peach Cake with Coconut Pecan Frosting by New Market BBQ

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 15-20

Peach Cake with Coconut Pecan Frosting by New Market BBQ

This is a deliciously simple recipe to prepare. ENJOY!!

Recipe Ingredients:

    Peach Cake:
  • 1 large can sliced peaches (29oz)
  • 2 eggs
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • Coconut Pecan Frosting:
  • 3/4 cup sugar
  • 1 can sweetened condensed milk (if you love it rich, otherwise use 1 cup evaporated milk)
  • 1 stick butter or margarine
  • 1 cup coconut
  • 1 cup nuts

How to Prepare:

    Cake:
  1. Drain the peaches (save juice to add to batter if needed)
  2. Empty peaches into a bowl, and mash by hand
  3. In mixing bowl, cream eggs and sugar till smooth
  4. Add flour, soda, and mashed peaches and mix well
  5. Spray a 9 x 13 inch cake pan and pour in batter.
  6. Bake in a preheated 350F degree oven for 20-25 minutes.
  7. Cool Cake while you prepare the frosting
  8. Frosting:
  9. Toast Coconut and Pecans first.(I just put on a cookie sheet in the oven - quick and simple)
  10. Boil everything but the nuts on top of the stove until thickens
  11. Remove from heat, stir in nuts and spread on cooled cake

Notes

You can choose to leave out the eggs, as the original recipe did not call for them. I like a super moist cake, so I decided to add them in. Make it your own!! You can also add some cinnamon if you like a little extra spice and flavor to your cake. ENJOY making it to your family's liking!!
